Grythyttan: A Taste of Sweden and Regional heritage as a Dynamic Force

In this session, native authorities will discuss the Philosophy and terroir of Grythyttan and the history of traditional Swedish food. Located in the boreal forest region, the town of Grythyttan developed around the mining industry. Because of the harsh winters, the production of food was largely based on storage capabilities and preservation techniques. In the early ´70s, during a period of industrial change, a local culinary entrepreneur established The Academy of Culinary Arts, Orebro University, and caused the community to renew its interest in food quality and tradition. Today, the town is home to a variety of reataurants and culinary artisans, including producers of flatbreads, handcrafted, cheeses and honey, and is a center for wild berries, mushrooms and wild game. The food industry in Grythyttan has become a Dynamic economic force in the region.
